Baby Salad Greens Tossed with Miso Dressing

1/4 C Shiro-Miso (white miso)
1/4 C Mirin (sweet sake)
1/4 C Rice Vinegar
2 tsp Dark Sesame Oil
2 Tbsp Vegetable Oil
1 to 1 1/2 Tbsp Fresh Ginger, finely grated
1 scallion, trimmed and minced (white and green parts)
Baby Green Salad

TO MAKE DRESSING: - In a salad bowl, whisk together the shiro-miso, mirin, and rice vinegar until smooth. Add the sesame and vegetable oils, ginger, and scallion and stir until well combined. This sauce is best freshly made. Refrigerate for up to 3 days. Place baby greens in a bowl and top with dressing
