Spanish Rice

2 Tsp - Butter
1/2 C - Chopped onion
1/2 C - Green bell pepper, seeded and sliced
1 - Garlic Clove
1 1/2 C - Long grained rice
2 1/2 C - Water
1 - Can (14.5 oz) Diced tomatoes, drained
1 tsp - Salt
1/2 tsp - Ground black pepper

Melt butter in a large skillet over medium-high heat; add onion, green bell pepper and garlic and sauté until slightly softened, about 2 minutes. Add rice and cook until golden, about 3 more minutes. Add water, tomatoes, salt and pepper and bring to a boil. Cover, reduce heat and simmer until rice is tender and liquid is absorbed, about 18 minutes. Let sit 10 minutes before serving.
