Melt butter in a large skillet over medium-high heat; add onion, green bell pepper and garlic and sauté until slightly softened, about 2 minutes. Add rice and cook until golden, about 3 more minutes. Add water, tomatoes, salt and pepper and bring to a boil. Cover, reduce heat and simmer until rice is tender and liquid is absorbed, about 18 minutes. Let sit 10 minutes before serving. |
