Cabernet Stained Pears

4 Bosc Pears, peeled and cored
2 Bottles or 1.5 Liters of Cabernet Sauvignon
1 Star Anise
3 Cloves
4 Cups Sugar

Mix together wine, sugar and spices. Place the pears standing up in a pot. Cover with the wine, sugar and spice mixture and bring to a simmer. Simmer slowly for approximately 1 hour OR until pears are soft. Do not allow the pears to boil. Cool the pears in the liquid to retain maximum flavor and color. Once the pears are cool, remove from the syrup. Reduce the syrup until it is very thick. Cool. This is the sauce for the dessert.
