Pickled Cucumber Salad with Dill

I large cucumber
4 tbsp whlte wine or cider vinegar
1-2 tbsp sugar, or to taste
2-4 tbsp finely chopped fresh dill
1/2 cup water
salt and pepper

Using a swivel-bladed vegetable peeler. lightly peel the cucumber in alternate stripes. Using a food processor fitted with a slicing disk,thinly slice the cucumber and turn into a large bowl with the juices. Combine the vinegar, sugar, dill, water. and salt and pepper to taste in a small bowl. Pour over the cucumber and refrigerate, covered. overnight, Serve chilled.
