Arugula Salad with Pine Nuts and Avocado

6 cups tender arugula
2 tomatoes, cut into small chunks
1/3 cup pine nuts
1 ripe avocado, pitted, peeled, and cut into thin slices
2-oz Parmigiano-Reggiano cheese, cut into thin shavings with a vegetable peeler
FOR THE DRESSING:
6 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
Salt and freshly ground pepper

In a salad bowl, toss together the arugula, tomatoes, pine nuts, avocado, and Parmigiano-Reggiano. To make the dressing, in a small bowl, whisk together the olive oil, lemon juice, and salt and pepper to taste. Pour over the salad and toss well. Serve at once.
