Chinese Chicken Salad

1/2 cup Soy sauce
1 garlic pressed
1 ginger sliced and mashed
4 tsp sugar
1 Tbls white wine
1/4 tsp five spice
1 boneless breast of chicken
Canola oil for frying
1 head of lettuce
1/4 cup green onions, sliced
1/2 cup celery, julienne
1/4 cup Chinese parsley, chopped
1/8 tsp celery salt
1/8 tsp salt
1/4 tsp five spice
2 tsp sesame seeds, toasted
2 tsp sesame oil

Combine first six ingredients and m arinate chicken in the sauce for 10 to 15 minutes. Fry chicken in canola oil until done. Place on absorbent paper towel, set aside to cool. When cool, shred chicken and place in a large bowl or platter. Combine the remaining ingredients except for the sesame oil and seeds. Let rest for a few minutes. Sprinkle the sesame seeds and oil into the salad and toss. Salt and pepper to taste.
