Preheat water back to 176 degrees F
Combine water and cheeses together in a zip lock bag and remove as much air as possible.
Cook sous vide for 30 minutes
Cool at room temperature for 15 minutes
Strain through a fine sieve lined with cheesecloth to collect the liquid.
Preheat oven to 350.
Spread cheese solids thinly on a baking sheet (use parchment or silpat). Bake until they are golden brown, about 45 minutes. Cool and break up. |
