Cut spaghetti squash in half lengthwise, remove seeds, then place face down on a baking sheet lined with parchment paper. Bake at 400 degrees fir 40 minutes or until a knife goes through easliy. Remove from over an let cool for 10 minutes then drag the tines of a fork on the cut side to create spaghetti strands until each side is totaly empty. Place the cooked spaghetti squash in a clean cheesecloth or dish cloth and squeeze all the water out REALLY well.
Preheat the oven to 375F.
In a medium bowl, mix the spaghetti squash with the egg, mozzarella, Parmesan, oregano and garlic powder.
Scoop out 1/2 of the mixture on the cookie sheet lined with parchment paper and spread it out to make a 14" or so pizza crust so its very thin, the thinner the crisper they will be.
Spray the crust lightly with olive oil spray and bake for 25 minutes, until golden brown.
Makes 2 - 14" crust |
