Using a sharp knife, split along the long side of each chicken breast to make a small pocket, then carefully open out each breast to make a small pocket. Divide the cheese equally between the pockets, and tuck 3 or 4 Basil leaves in each. Close the openings and season with salt and pepper. Heat oil in a skillet, add chicken and gently fry for 15-20 mins, turning serveral times, until golden brown and tender. Serve warm. |
