16 oz Ricotta Cheese
16 oz Cottage Cheese
1 Round Mozzarella, grated
1C grated parmesan
1 Egg
Salt and pepper to taste
Fresh pasta sheets, cut in squares, fill and fold
1 Onion
4 Cloves Garlic
Olive oil
1 1/2 lb Italian Sausage
2 - 28 oz Gia Russo San Marzano plum peeled tomatoes
1 tbsp Sugar
Fresh Basil, chopped
Mushrooms, chopped

Sautee onion and garlic, add sausage, break it up and brown it. Add tomato sauce; mix up with hand and remaining ingredients except parmesan. Simmer about 2 hours. Put small amount of sauce in bottom of 9” x 13” pan, place pasta on top add rest of the sauce. Top with parmesan cheese. Bake 20 min in 375 degree oven, or until bubbly.
