3 garlic cloves, sliced thinly |
|
9 oz Hallouni, Provolone or Feta Cheese, sliced thinly |
|
Granted rind and juice of 1 Lemon |
|
1 Tbsp Fresh Thyme, chopped |

Cut the peppers in half, remove core and seeds. Rub the skins of the peppers with a little olive oil, then arrange skin side down on a large greased baking sheet. Scatter 1/2 the garlic into the peppers, add 2 basil leafs to each pepper, then add cheese, lemon rind then finally the remaining garlic. Drizzle over the remaining olive oil and lemon juice. Bake peppers in a pre-heated oven, 400 degrees for 30 minutes, until tender and beginning to char around the edges. Serve warm. |
