Baked Garlic Bruschetta

1 to 2 heads of garlic
2 tablespoons olive oil
1 tablespoon minced garlic
2 red onions, cut into a small diceml+xm
Fresh basil leaves (12-15)
3 large tomatoes, diced
1 large Italian baguette bread, sliced into 15 to 20 slices

Mix all ingredients in bowl, day before is best. Day of serving, roast garlic (375F for 35 to 45 mins) in foil, add dash of olive oil, salt & pepper until tender and spreadable Slice baguette diagonally and toast lightly Spread roasted garlic on each piece of sliced baguette; place a spoonful of bruschetta on bread at time of serving. Extra can be placed on plate for those who would like more bruschetta mix on the bread. Serves 15 – 20 pieces
