Jicama Watercress and Mango Salad

4 tablespoons olive oil
12 tablespoons white wine vinegar
8 teaspoons apple juice concentrate
4 large bunches watercress
4 Cups spring lettuce mix
2 Cup julienned jicama
2 Cup diced red pepper
2 Cup diced mango
2 Cup pecan pieces

Toast pecan pieces over medium heat in non-stick pan. Set aside. Whisk oil, vinegar and apple juice concentrate in a small bowl. Combine watercress, lettuce, jicama, red pepper, and mango in a large salad bowl. Toss gently with dressing and sprinkle with toasted pecans
