Zucchini Bread

2 1/2 cups zucchini, grated
2 teaspoons vanilla
1 cup walnuts, chopped
3 eggs
1 cup wesson oil
2 cups sugar
3 cups flour
1 teaspoon salt
1 teaspoon soda
1 1/4 teaspoon baking powder
3 teaspoons cinnamon

Preheat over to 350 degrees. In a large bowl beat eggs then add oil, zucchini, vanilla and sugar then mix. Add remaining ingredients and mix well. Pour equal amounts of batter into 2 square loaf pans, greased with Crisco or Pam. Bake for 1 hour or until toothpick come out clean. Remove from over and cool for 5-10 minutes then remove from pan.
