Salmon Burger

SAUCE:
1/4 cup mayo
1 tbsp chopped fresh cilantro
1 tbsp fresh lime juice
salt and pepper
SALMON BURGER:
1 Lb salmon fillet, skinned and cut into 1 inch pieces
1/4 cup dry breadcrumbs
2 tbsp cilantro leaves
2 tbsp chopped green onions
1 tbsp chopped jalapeno pepper (seeded)
2 tbsp fresh lime juice
1/2 tsp salt
1/4 tsp pepper
4 large hamburger buns with sesame seeds
12 (1/4 inch thick) slices English cucumber
1 head of lettuce

SAUCE - Combine all ingredents and mix well, cover and chill. SALMON BURGER - Place salmon in food processor, pulse until coarsely chopped. Add breadcrumbs, cilantro, green onions, jalapeno, lime juice, salt and pepper then pulse a few times or until well blended. Divide salmon mixture into 4 equal portions, shaping each into a thick patty. Pre-heat grill on high. Brush each patty with canola oil on each side, place on grill, cooking 3 minutes per side or until cooked through. Place in bun, top with mayo sauce, cucumber slices, lettuce.
